INGREDIENTS:
- 2 cloves garlic, crushed
- 1 yellow onion, peeled and chopped
- 3 stalks celery, chopped
- 3 tablespoons olive oil
- 6 tomatoes, cut into large dice
- salt and pepper to taste
- 2 tablespoons butter
1 Saute the garlic, yellow onion, and celery in the oil. When the vegetables are tender but still firm, add the tomatoes (if you have cut the tomatoes into large dice using a very sharp knife, you should not have a wet mess on your hands). Add a bit of salt and pepper, and just heat the tomatoes. Garnish with butter, and serve hot.
